My family loves the flavour of this homemade tomato soup. This is delicious in the summer when tomatoes and basil are ripe and in season.


Tomato Pasta Soup with Basil

3 ripe tomatoes or 28oz diced tomatoes with liquid
2 Tbsp olive oil
1 medium onion, finely chopped
1 clove garlic, minced
1 small red pepper, chopped
4 cups vegetable stock
3 Tbsp tomato paste
sea salt and pepper
1 tsp maple syrup
1 1/2 tsp dried basil
1 cup brown rice pasta shaped like shells

Saute garlic, onions and peppers in olive oil. Peel tomatoes or add canned tomatoes to saucepan for 10 mins. Add stock and tomato paste, salt and pepper and maple syrup. Cover and simmer 15 minutes. Remove from heat and add basil. Puree in food processor until smooth. Cooke pasta until tender. Drain and rinse well with to water. Add to soup, rewarming gently. Serve with fresh basil.
