When you are allergic to scrambled eggs, breakfast can be a bummer. But there are alternatives that can be just as tasty and protein rich. Southwest Scrambled Tofu

 

1 large baked potato
1 block firm tofu, crumbled or mashed with a fork
2 tsp olive oil
2 dashes turmeric
1/4 cup green onion, chopped
3/4 cup red pepper, in thin strips
1 cup mushrooms, sliced
picante sauce, to taste (optional)

Cool and thinly slice baked potato.  In pan heat oil, add crumbled tofu and turmeric, cook for 5 minutes.  Add vegetables and potato and cook on high until veggies tender crisp.  Stir in picante sauce and serve.  Make sure you choose a firm block of tofu for this recipe, such as Sol Cuisine Artisan Organic tofu (available at Zehrs markets).
