Eating vegetarian proteins means that you need to combine different foods to get all of the Essential Amino Acids in order for your body to make up full protein molecules. This can mean combining beans and corn – as in many Mexican dishes, or beans and squash, or beans and nuts, or beans and grains like rice. This dish is amazing because it combines lentils, nuts and grains all in one yummy loaf.

This lentil loaf is another one of those hearty, comfort foods that we think of from home.

 

 

Lentil Loaf

3 cups cooked green lentils
1 cup cooked brown rice
¾ cup rice or spelt or chickpea or all purpose gluten-free flour
2/3 cup water
1 cup chopped nuts – cashews, sunflower seeds, almonds are all great
1 Tbsp soy sauce (I use Braggs)
1 tsp ground sage
1 Tbsp olive oil

Mix all ingredients together. Line a loaf pan with parchment paper. Spoon mixture into loaf pan. Bake at 350F for 45 minutes. Serve with leftover gravy or we use salsa or tomato relish, and with cooked vegetables and salad.
