Use whatever bread you are able to eat – whole grain, 100% rye, rice bread, spelt bread, sourdough, etc. And if you are sensitive to bananas take them out, or substitute pureed pumpkin and add a dash of cloves to the recipe – it’ll be delicious either way.

Eggless Banana French Toast

1 cup water
1 block soft silken tofu
1/4 tsp nutmeg (optional)
3 1/2 Tbsp maple syrup
1/4 cup soy milk
1 tsp cinnamon
1/2 tsp sea salt
1 large ripe banana
8 slices bread
Coconut oil for frying

Pumpkin_french_toastPreheat griddle or cast iron frying pan to 400oF. Blend all ingredients, except bread, in the food processor until smooth.  Pour into shallow dish.  Dip bread slices until well coated and place on hot coconut-oiled griddle.  Brown on both sides.  Serve with apple or other fruit sauce, slathered with almond butter or topped with a little maple syrup.
