1lb dried navy beans
1 tsp baking soda
filtered water
2 medium apples, cored and chopped
½ cup raisins
1 large onion, peeled and minced
2/3 cup unpasteurized buckwheat honey
1 stock cube, your preferred flavour – vegetable, chicken, beef
1 Tbsp mustard
1-3 tsp curry powder, to taste
1 tsp sea salt

Combine navy beans and baking soda in a bowl. Add enough water to cover by 2 inches. Soak overnight. In the morning, drain and rinse well. Add enough water to cover, and bring to a boil. Reduce heat and simmer 10 minutes. Turn off heat, over pot and let sit until cool. Drain beans, reserving liquid.

In Crockpot combine beans with remaining ingredients. Cover with enough reserved bean liquid to barely cover.  Allow to simmer all day – adding more liquid if needed.
