Maple Walnut Granola

4 cups rolled oats
1 cup rice bran
1 cup chopped walnuts
1 tsp. pure vanilla extract
¼ cup coconut oil, melted (measure into a glass measuring cup and set this on a warm stove to allow melting)
¾ cup maple syrup
½ cup dried currants
1/2cups dried cranberries

 

Preheat oven to 250oF. In a large mixing bowl, combine oats, rice bran, nuts and vanilla. Add oil and maple syrup and mix until well combined and evenly moistened. Mixture should be crumbly and sticky. Spread mixture in baking dish and bake for 90 minutes, stirring every 15 minutes for even toasting, until the mixture is golden brown and dry. Stir in dried fruits and cool well. Store in an air tight container.

 

This recipes all make a lot of granola. Store some in an airtight container for daily use, and put the rest into the freezer in an airtight container. An adult portion of granola is 1/2 cup and kids should start with 1/3 cup. Serve with almond, rice or soy milk, or yoghurt for a healthy start to your day.
