Most true vegetarians would prefer these homemade unprocessed burgers to store bought fake meat burgers anyway. Many of my meat eating friends would agree that these are great tasting.

Cheesy Quinoa Bean Burgers


1 cup water
1/2 cup quinoa, rinsed well in a sieve and drained
1 Tbsp olive oil
1 cup onions, diced finely
2 cups mushrooms, diced finely
1 tsp garlic, minced
3/4 tsp dried marjoram
1 tsp dried oregano
2 Tbsp chia seeds, ground
2 Tbsp tapioca flour
3/4 cup black beans
2/3 cup smoked cheddar cheese, shredded
1/2 cup pecans, toasted
1 Tbsp Bragg’s

Bring water to a boil. Add rinsed quinoa and return to a boil. Reduce heat and simmer 15 minutes. Shut off heat, cover with lid and allow water to absorb.
Heat oil in a large pan, add onions and mushrooms, garlic and spices. Cook until tender.
Mix all ingredients together in a large mixing bowl. Scoop by heaping Tbsp and press into patties. Place on a parchment-lined baking sheet.
Bake at 350F for 27-30 minutes until golden brown and crispy.
