Black Bean and Quinoa Burgers

1/2 cup uncooked quinoa

2 cups soaked and pre-cooked black beans, or well rinsed canned ones

2 Tbsp olive oil

1 onion, diced

1/2 zucchini, diced

What to do:

1) Place quinoa in a sieve and rinse well with cold water. Bring 1 cup water to boil. Add quinoa, and return to a boil. Turn down heat and simmer 15 mins or until quinoa becoming transparent. Shut off heat, cover and allow to sit until all water is absorbed.

2) Heat olive oil in pan and sautee onion and zucchini in oil until lightly browned. Add in black beans and cook for 5-7 minutes.

3) Place 2/3 bean mixture and 1/3 quinoa into blender and pulse until well chopped. Scrape out of blend and back into pan. Mix thoroughly with remaining bean mixture and quinoa. Allow to sit and cool for 10 minutes.

4) Divide into 8 portions and shape into patties. Heat a little olive or coconut oil in pan and fry burgers for 4-5 mins on each side. remove from pan. Repeat with all burgers until cooked.

Serve over spinach or other greens with sliced tomato, and drizzle with hot sauce or tahini sauce.
