This amazingly easy and delicious vegetarian soup reminds me of Campbell’s “Bean with Bacon” from when I was a kid. One of my kid patients inspired me to figure out this one.

Bean with “Bacon” Soup

1lb great northern beans, soaked overnight with baking soda, drained and well-rinsed
3 carrots, very finely minced
2 stalks celery, very finely minced
1 onion, very finely minced
2-3 cloves garlic, minced
1/2 tsp rubbed sage
4 cups vegetable stock
2 cups water
2-3 drops liquid smoke
sea salt and pepper to taste

Place soaked, drained and rinsed beans into pot with fresh water. Bring to a boil and simmer for 10 minutes. Drain and add to crockpot. Place carrots, celery, onions, garlic and sage into crockpot. Add broth and water. Cook for 3-4 hours (or longer works too). Add liquid smoke, salt and pepper to taste.
