When getting together for a potluck my friend Kath will often say “can you bring your quinoa salad?” I ask “which one?” “Any of them” is always her response, but she really likes this one.

 

3 cups cooked quinoa
1 cup green onion, chopped
1 cup celery, finely chopped
½ cup each red and green pepper, finely chopped
1 cup frozen green peas or frozen shelled edamame, drop into boiling water for 1 minute
1 cup cilantro, chopped
½ cup parsley, chopped
1 cup cashews, toasted
½ cup black sesame seeds (white will do in a pinch)

Combine all ingredients in a large bowl.

Dressing
2 cloves garlic, minced
1/3 cup Bragg’s All-Purpose Liquid Soy Seasoning
1 Tbsp toasted sesame oil
1 Tbsp lime juice
½ cup olive oil

Combine all ingredients in a glass jar. Screw on lid and shake well. Toss with salad ingredients until all combined and coated with dressing.
