Honey Sweet Potato Biscuits

These delicious scones with just a hint of sweetness combine well with savoury fall stews and soups. Trying dunking them in.Savoury_stew

I make a batch and then freeze some for other nights.

Honey Sweet Potato Biscuits

2 1/2 cups whole spelt flour

1 tbsp baking powder

1/2 tsp sea salt

1/2 cup coconut oil

1 tbsp grated orange/lemon peel

3/4 cup baked sweet potatoes, peeled and mashed

1/3 cup honey

1/2 cup unsweetened almond or soy milk

Sweet_potatoes 1) Heat oven to 400 degrees F. In a large bowl, combine flour, baking powder, and sea salt.

2) Using fingers combine coconut oil into the flur mixture until it resembles course bread crumbs.

3) In a measuring cup combine mashed sweet potatoes, honey and grated orange/lemon rind. Add to flour mixture and mix until combines, adding almond or soy milk if needed to make soft but not sticky dough (I often don't need any milk depending on how moist the sweet potatoes arae).

4) Drop by spoonfuls onto parchment lined baking sheet or pizza stone to measure 1 inch thick and 2.5 inches diameter. Place into oven 15-18 mins until lightly browned. Enjoy!
