World's Best Broccoli Soup

I have been searching and modifying broccoli soup recipes forever it seems. I have finally tried one that I love. It is creamy - with no cream, savoury and packed with broccoli flavour.

3 Tbsp + 2 Tbsp butter, divided

1 cup leeks, or onions, chopped

1/2 tsp sea salt

1/4 tsp fresh goround pepper

Generous pinch ground nutmeg

1 clove garlic, minced

1/2 tsp dried thyme

3 Tbsp all purpose flour, or tapioca flour

3 cups stock

1 large full head of broccoli, cut into florets

1/2 cup unsweetened almond milk

1/1/4 cup shredded cheddar cheese, divided (optional)

Steam broccoli until just barely tender. Melt 3 Tbsp butter in large saucepan, add leeks and salt, pepper and nutmeg. Saute for 3 mins. Add garlic and thyme, saute 20 seconds. Add flour, cook 2 mins stirring to coat leeks with flour. Add stock (I used broccoli water), whisking and bring to a boil. Add broccoli and cook until fully tender. Remove from heat and puree using an immersion blender. Return to low heat, add almond milk and heat only until heated thru, do not boil. Stir in 2 tbsp butter, and 1 cup cheese if using. Stir until cheese melts and serve garnished with remaining cheese.
