Creamy Tahini Dressing

Now here is a recipes that is sure to enhance your salads and other dishes too. 

Tahini_sauce

Tahini is the butter made from sesame seeds (i.e. like peanuts are to peanut butter, sesame seeds are to tahini). Tahini is rich in calcium, protein as well as containing copper, manganese, magnesium, iron, zinc and other minerals. It is a natural source of both omega-3 and omega-6. 

I use this as an egg-free alternative to caesar salad dressing. I love pouring some over lightly cooked wilted leafy greens. This recipe is adapted from the Fresh Restaurant cookbook "Fresh At Home".

Creamy Tahini Dressing

2-3 cloves garlic, minced
1/2 cup chopped fresh parsley (I have substitute dried parsley when fresh wasn't available)
1/2 tsp sea salt
3 tbsp lemon juice, fresh squeezed
2/3 cup filtered water
1/2 cup tahini (available at your local grocery or healthfood store)

In a blender, process garlic, parsley, salt, and lemon juice until smooth.
Add water and tahini. Process until smooth.
Store in fridge for up to 1 week in a screw-top glass jar.
