Cilantro Quinoa Veggie Burgers

With vegetables, beans and quinoa in them, these burgers are nutritional powerhouses, not to mention that they contain chia seeds too, which adds an Omega 3 boost. 

Cilantro Quinoa Veggie Burgers 

1 1/2 cup water
3/4 cup quinoa, rinsed well in a sieve and drained
1/4 cup green onions, diced finely
1/2 cup carrots, grated
1 tsp garlic, minced
1/4 cup cilantro, chopped
2 Tbsp chia seeds, ground
3 Tbsp tapioca or arrowroot flour
1/2 cup black beans, mashed
2 Tbsp water
1 tsp Herbamare
1 Tbsp Bragg's
1 tsp cumin
Coconut oil for frying

Bring water to a boil. Add rinsed quinoa and return to a boil. Reduce heat and simmer 15 minutes. Shut off heat, cover with lid and allow water to absorb. Cool.
Combine all ingredients, except coconut oil, in a large mixing bowl. Mix together well. Form into patties and place on parchment-lined baking sheet. Refrigerate for 30 minutes. Add more chia seeds if falling apart.
Heat coconut oil in a large frying pan, Lightly brown patties on both sides. Remove to parchment-lined baking sheet.
Bake at 325F for 15 minutes. Serve warm.
