Greek Salad Dressing

In university, one of my roomates gave me this recipe. It is so simple and so delicious I had to share it.
Greek Salad Dressing
3 Tbsp lemon juice, fresh squeezed
3 Tbsp extra virgin olive oil
1 tsp dried oregano or 2 tsp fresh minced oregano
2 large cloves garlic, minced
Sea salt and black pepper to taste
Mix all ingredients together in a screw top jar. Shake well. Store in fridge, but use within 1 week.
Serving suggestions:

2 large tomatoes, chopped
1 cup cucumber, diced
1 red or green pepper, diced
1/4 cup red onion, chopped finely (if desired)
1/4 cup black olives
1/4 cup crumbled goat feta cheese
For a heartier salad, and one that is especially good to take to summer get togethers - add 2 cups cooked brown rice pasta shells, 1 cup romano beans and 4 cups spinach leaves.
