Sunbutter Bars

I am always trying to find recipes for snacks I can send to school with my daughter as a change from homemade muffins. These bars are delicious and nutritious. Try them out on your kids. My daughter saw bars like these while we were in the Bulk Barn one day - by Enjoy Life - which is a great brand. On looking at the engredients I thought I could better them and make more for less, so here is my version.

Sunbutter Bars

1 cup sunflower seed butter – often called sunbutter
1 cup honey
1 cup chopped pecans, or for a school-friendly version use hemp seeds instead
1 cup raw sunflower seeds
1 cup unsweetened shredded coconut
1 cup raisins

 

Preheat oven to 350F. Blend sunbutter butter and honey in a bowl. In a bowl mix together the pecans (or hemp seeds), coconut, sunflower seeds and raisins. Add the sunbutter and honey mixture. Mix until well combined. Pour into a 9x13” parchment paper-lined casserole dish and press flat. Bake 20-30 minutes. Remove and cool before cutting. Cut into 24 bars.
