What does a Naturopathic Doctor eat anyway?

February 27, 2013

Here is a glimpse at some of my days. Remembering that I eat primarily vegetarian with some organic salmon thrown in there.

Sunday

Breakfast - homemade maple pecan cranberry granola with almond milk and fresh raspberries. Roasted dandelion root tea.

Lunch - leftover vegetable coconut curry (broccoli, cauliflower, red pepper, zucchini, green beans, onion, mushrooms, tomatoes, cubed tofu, chickpeas and coconut milk) over wild and brown rice mix. Green tea.

Dinner - Baked root vegetables (beets, carrots, parsnips, rutabaga with honey ginger glaze) baked salmon (olive oil, garlic, Bragg's, lemon juice marinade). Homemade apple/pear/raspberry crisp

Monday

Breakfast - Homemade eggless raspberry chocolate chip pancakes with almond butter and pure maple syrup. Roasted dandelion root tea.

Lunch - Homemade borsct (beet and cabbage soup with lots of veggies and loaded with dill), 1 poached egg on a rice cake with mayonnaise (my weakness - I love it what can I say), and a dill pickle

Snack - brazil nuts, almonds and dates

Dinner - Vegetable Stirfry (broccoli, red peppers, mushrooms, green onions, ginger, garlic, black olives) with sesame seed and rice flour breaded tofu (marinated with sesame oil, lime juice, bragg's, garlic) - the rest of my family had the same sesame seed and rice flour breading on homemade chicken nuggets. Greek salad (red leaf lettuce, tomatoes, cucumbers, red peppers, black olives, goat feta, homemade dressing)

Tuesday

Breakfast - strawberry/raspberry smoothie (almond milk, ground flaxseed, vitamin C powder, flaxseed oil, seaweed powder, Vega energizing smoothie oh natural)

Lunch - Salad - chopped fresh green kale (3cups) leftover roasted root vegetables and sesame tofu cubes, lemon juice and olive oil and a little crumbled feta. Echinacea throat coat tea.

Dinner - Leftover vegetable coconut curry over mixed rice. Chamomile and lavendar tea

Don't be fooled, I usually partake of the 1 square of 90% dark chocolate int he afternoon that I often recommend to my patients, I just didn't this week. I realize there are not as many snacks as I would usually eat either, my appetite has been lower as I've been fighting a cold. What can I saw I'm human!
