Beet & Apple Salad with Feta

This salad is beautiful served over baby arugula, but doesn't need the greens to still be tasty. Pair it wth a lentil or bean soup for a delicious vegetarian meal.

2 large beets, peeled and shreddedBeet_apple_feta_salad 
2 carrots, peeled and shredded
2 apples, peeled, cored and shredded
1 cup crumbled goat feta cheese
1 cup sunflower seeds, toasted.

Combine all ingredients, except for feta and seeds in a large bowl.

Dressing
¼ cup lemon juice
1 tsp Herbamare*
1 Tbsp agave nectar**
1 Tbsp grainy mustard
½ cup olive oil

Combine ingredients in glass jar. Screw on lid and shake well. Toss with salad ingredients in bowl to mix well. Top with feta and seeds.

** a natural sweetener derived from the agave plant, it has subtle molasses tones and is 25% sweeter than sugar, but contains vitamins and minerals so it doesn't produce the dramatic blood sugar spike that cane sugar does. Available in organic section at Zehrs or healthfood stores
