Maple Pecan Cranberry GranolaHomemade-maple-cranberry-pecan-granola-2

6 cups rolled oats
1 cup pecans
1 cup sunflower seeds
1/2 cup raw cocoa nibs
2 tsp ground cinnamon
1/2 tsp sea salt
1/2 cup maple syrup
1 tsp liquid stevia
1/2 cup warm water
2 tsp grated fresh ginger
2 tsp vanilla extract
1 cup dried cranberries

Preheat oven to 250F. In a large bowl, combine oats, pecans, sunflower seeds, cocoa nibs and spices. In a large glass measuring cup, combine maple syrup, stevia, water, vanilla, and ginger. Add liquid to cereal mixing until all it moist. Spread out in a baking dish. Cook for 60 minutes, stirring every 15 minutes until dry and crumby. Remove from oven, stir in cranberries and cool completely. Store in an air tight container.
